| | Radio KoL | ] | Cukes, tomatoes, onions, and potatoes are all ready for picking. Makes for a busy time in the Junior garden. Plus I've got all this produce Mrs. Junior won't eat. So I make myself a lot of little salad things. Below is my current favorite.
What to do with a billion pear tomatoes, six or seven roma tomatoes, two cucumbers, and some walla walla sweet onions
Peel (or not if you don't want) cucumber, slice into somewhat thin rings. Place in a bowl, add some salt, cover with half white vinegar and half water. Let soak for a day or so, then drain.
Peel and slice onion into thin slices. Break into individual rings.
Halve roma tomatoes and then slice into thin wedges.
Toss both tomates, cukes, and onions with a little italian dressing.
Serve chilled as side dish, or on top of a mixed green salad. |

I bet that'd be nice as a sandwich condiment, too.
Ahhh tomatoes and onions together are perfect, even with just a spot of salt. Mrs Junior won't eat them?
Mrs. Junior eats green beans, peas, carrots, corn, potatoes and lettuce. That's it. No other vegetables at all.
Lots of tomatoes?

Salsa.
I don't have the time to chop, cook, and can salsa. But I do have plans for making a small batch with some fresh apricots.
Mmm, add some crumbled feta to that, and you have a lovely Greek salad. Well, if you use a Greek-like dressing, anyway.
My Mum makes a nice little dish with cucumbers and onions, which is aptly called "cucumbers & onions". Slice cukes and onions, cover with salt water for a few hours, drain. Dress liberally with a very thin dressing of vinegar, half & half, a bit of sugar, and pepper. I think that's it. So fresh and lovely! | |
